INGREDIENTS:

• 400g puff pastry;
• 2 small zucchinis(I used one green and one yellow);
• 125g mozzarella;
• 125g cow telemea;
• salt, pepper, granulated garlic, thyme;
• lemon peel.

METHOD OF PREPARATION:

1. I washed the zucchinis, removed the ends and cut them into thin slices. The slices were placed on kitchen towels and I sprinkled some salt on top. After 5 minutes, with kitchen towels, I patted them to remove the excess water.
2. I placed the dough on a tray lined with baking paper and used a knife to create a rectangle inside, leaving edges of about 1.5 cm. Then, I pricked it a few times with a fork.
3. Inside the rectangle I sprinkled grated mozzarella, placed the slices of zucchini, added granulated garlic and pepper over them. Lastly, I added more cheese and a bit of thyme.
4. The tray was placed in the oven preheated to 220°C for approximately 25 minutes.
5. After removing it from the oven, I added some lemon zest on top, and that's all! It pairs wonderfully with yogurt too!🤍
