INGREDIENTS:

• 330g bananas (weighed without peel);
• 2 eggs;
• 60g brown sugar;
• 2 sachets vanilla sugar;
• 75g butter (82% fat);
• 130g Greek yogurt (10% fat);
• 190g flour;
• 165g finely chopped walnuts;
• 1 teaspoon baking soda;
• 1/2 lemon juice;
• 1 sachet baking powder.

METHOD OF PREPARATION:

1. I mashed the bananas very well. I added: well-beaten eggs, melted butter, lemon juice, yogurt and baking soda. I left this composition aside for 5-10 minutes.
2. In a separate bowl, I mixed the flour, brown sugar, vanilla sugar, baking powder, and 140g of the nuts.
3. I poured the dry ingredients composition over the wet ones and mixed it.
4. I transferred the cake to a tray lined with baking paper, sprinkled the rest of the nuts on top and put it in the preheated oven (180*C top and bottom) for 1 hour. I left the edges of the baking paper larger, and after 45 minutes I covered the banana bread with them (I also used a toothpick to make them stand). This way I avoided it from browning too much. After the time was up, I left the tray in the oven, without opening it, for another 10 minutes.
5. I cooled it overnight and the next day it was ready to serve. 😁
