Potatoes with eggs and mozzarella

INGREDIENTS:
• 1kg potatoes;
• 2 onions;
• 4 cloves of garlic;
• 3 tablespoons oil;
• 1 teaspoon granulated garlic;
• 1 teaspoon sweet paprika;
• 1 teaspoon salt;
• 1/2 teaspoon pepper;
• 10g butter;
• 8 eggs;
• 125g sausages;
• 100g mozzarella;
• 2 onions verdant.
METHOD OF PREPARATION:
1. I cleaned, washed and cut the potatoes into smaller cubes.
2. I put the potato cubes in water, washed them well, took them out on kitchen towels and wiped them of excess water.
3. I then transferred them to a bowl and seasoned them with 2 tablespoons of oil, salt, pepper, granulated garlic and paprika. I mixed and transferred them to a tray lined with baking paper. I leveled so that I had a single layer and put the tray in the preheated oven at 200*C for 25 minutes. Halfway through, I mixed them in a little.
4. I put the butter and a tablespoon of oil in a pan. When they were heated, I added the finely chopped onions and garlic. I cooked them for 5 minutes.
5. I then added 125g of small cut sausages and let them to brown a little.
6. Meanwhile, I beat the eggs and mixed them with 70g of grated mozzarella.
7. I added the eggs and potatoes to the pan, mixed very well and covered with a lid. I left everything on low heat until the egg was cooked. From time to time I mixed in the composition.
8. Two minutes before turning off the heat, I sprinkled the rest of the mozzarella on top.
9. I turned off the heat, added some green onions on top and started eating!
