Classic cheesecake

INGREDIENTS:
• 260g digestive biscuits;
• 120g butter 82% fat;
• 600g cream cheese;
• 4 large eggs (or 5 smaller ones);
• 300g powdered sugar ;
• 200ml whipping cream;
• 1 1/2 vanilla essence;
• 40g corn starch;
METHOD OF PREPARATION:
1. With the help of a chopper I crushed the biscuits. I added the melted butter over them and mixed until I got the consistency of wet sand. I placed the composition in the pan lined with baking paper (24cm diameter pan) and then I leveled it well. I also placed the composition on the walls of the tray. I put it in the oven preheated to 160*C until the cream was ready.
2. In a bowl, I cracked the eggs and added the powdered sugar. I mixed until it doubled in volume, then incorporated the cream cheese.
3. I mixed well and when I got a homogeneous composition, I added the whipping cream and the essence. I mixed for a few seconds and then incorporated the starch.
4. I poured the cream mixture into the pan, sprinkled a crushed digestive biscuit on top, and baked it for an hour and 20 minutes. In the oven I also added a bowl of hot water that I left throughout the time I baked the cheesecake.
5. Let it cool until it reaches room temperature, place it on a plate and put it in the fridge for a few hours or overnight.
