Cheesecake with cocoa base

Cheesecake is definitely one of the most loved desserts. There are many delicious options, but here I chose a cocoa base.

The tray I used is 17cm, if you use a larger tray, double the quantities. 🤗

INGREDIENTS:

• 100g digestive biscuits;
• 50g cocoa biscuits;
• 50g butter 82%;
• 150g powdered sugar;
• 2 eggs;
• 100 ml cream for whipped cream;
• 300g cream cheese;
• vanilla essence;
• 25g corn starch.

METHOD OF PREPARATION:

1. I crushed the biscuits with the help of a chopper. I put the melted butter on them and mixed until I got the consistency of wet sand.
2. I transferred the composition to a tray lined with baking paper and pressed it very well on the bottom and sides of the pan.
3. I mixed the eggs and powdered sugar for about 30 seconds and then added the other ingredients. I mixed until I obtained a homogeneous composition.
4. I transferred the composition to the tray, sprinkled crushed biscuits on top and put the tray in the preheated oven (150*C) for an hour.
5. I kept a pan of hot water under the cheesecake pan at all times while baking.
6. I took the cheesecake out of the oven, let it come to room temperature, and then kept it in the fridge until the next day.
