INGREDIENTS:

• 260g digestive biscuits;
• 120g butter 82% fat;
• 600g cream cheese;
• 4 large/medium eggs (or 5 smaller ones);
• 300g powdered sugar;
• 200ml heavy cream for whipping;
• 1 vanilla essence;
• 40g cornstarch;
• 150g salted caramel (you can find the recipe here);
+ optional for decoration: 30g crushed biscuits and 1/2 teaspoon salt flakes.

METHOD OF PREPARATION:

1. Using a chopper, I crushed the biscuits. I added the melted butter and mixed until I obtained the consistency of wet sand. I placed the composition in the tray lined with baking paper (24cm diameter tray) and then leveled it well. I also placed the composition on the walls of the tray. I put it in the preheated oven at 160*C until the cream was ready.
2. In a bowl, I broke the eggs and added the powdered sugar. I mixed until they doubled in volume, at which point I added the cream cheese, the whipped cream and the essence. I mixed some more until I obtained a homogeneous composition and then I incorporated the starch.
3. I put the cream in the tray and put it back in the oven for an hour and 20 minutes. I also added a pan of hot water in the oven and left it there the entire time I baked the cheesecake.
5. Let it cool until it reaches room temperature and then pour the caramel on top. Level it and decorate with crushed biscuits and salt flakes. Leave it in the fridge for a few hours or overnight.
