Pumpkin cheesecake

INGREDIENTS(AT ROOM TEMPERATURE):
• 260g digestive biscuits;
• 120g butter 82% fat;
• 300g cream cheese;
• 300g pumpkin puree;
• 5 small eggs (or 4 larger );
• 300g powdered sugar;
• 200ml whipping cream;
• 50g starch;
• 1/2 rum essence;
• 2 teaspoons cinnamon;
• 1 /4 teaspoon nutmeg.
METHOD OF PREPARATION:
1. I crushed the biscuits with the help of a chopper. I put melted butter and a teaspoon of cinnamon over them and mixed until I got the consistency of wet sand.
2. I transferred the composition to a tray lined with baking paper and pressed it very well on the bottom and sides of the tray.
3. I mixed the eggs and powdered sugar for about 30 seconds and then added the other ingredients. I mixed until I obtained a homogeneous composition.
4. I transferred the composition to the tray and put it into the oven preheated to 160*C. I baked the cheesecake at 160°C for 40 minutes, then reduced the temperature to 140°C and continued baking for an additional 40 minutes. Before baking the cheesecake, I put a bowl of hot water in the oven and kept it inside for the entire cooking time.
