Pecan cheesecake

INGREDIENTS:
• 3 apples;
• 300g sugar;
• 600g cream cheese;
• 200ml whipping cream;
• 3 large or 4 smaller eggs;
• 30g starch;
• 1 vanilla essence;
• 200g pecans;
• 120g butter;
• 150ml water;
• 50g honey;
• 3 teaspoons cinnamon;
• 6 pie sheets.
METHOD OF PREPARATION:

1. I browned the pecans for a few minutes and chopped them finely.
2. I peeled the apples, removed the cores and seeds and cut them into slices. I placed them in a deep pan over medium heat and added 50g of sugar, 3 tablespoons of cinnamon, and 20g of butter. I kept them on the heat for 5-7 minutes, until they softened. I stirred constantly.
3. I broke the eggs into a bowl, added 200g of sugar (here it would be ideal to use powdered sugar) and mixed until they doubled in volume.
4. I added the cream cheese, the whipping cream and the essence. I mixed until I obtained a homogeneous composition and then incorporated the cornstarch.
5. I lined a 24cm round baking tray with baking paper and greased the sides with butter. One by one, I placed 4 pie sheets in it and greased each one with butter (including the portion of the sheet that is on the sides of the tray). You will see that part of the baking sheet will remain on the outside. I placed each sheet carefully, so that I could make it fit as well as possible in the tray, but so that it would not break.
6. After placing all four, I placed the chopped pecans and leveled them. On top of them I placed two more pie sheets, which I also carefully placed and greased well with butter.
7. I placed the cheesecake composition in the tray, and from place to place I added the apples. I covered the composition with the parts of the pie sheets that remained on the outside and after placing them all, I greased them very well with butter.
8. I put the tray in the preheated oven at 160*C for an hour and twenty minutes. I also had a tray of hot water in the oven at all times during baking.
9. Shortly before taking the cheesecake out of the oven, I made the syrup. I put the water on the fire along with 50g of sugar, the honey and a teaspoon of cinnamon. I mixed everything well and kept it on the heat just until the sugar melted.
10. I took the tray out of the oven, sprinkled the syrup on top and let the cheesecake reach room temperature. I put it in the refrigerator and kept it until the next day. Optionally, before cutting it, you can sprinkle a few chopped pecans on top.
