Chicken Tikka Masala with rice and pita bread

CHICKEN TIKKA MASALA INGREDIENTS (4-5 SERVINGS):

• 900g boneless chicken thighs;
• 2 onions;
• 20g butter;
• 3 tablespoons oil;
• 3 tablespoons yogurt;
• 4 teaspoons concentrated tomato paste;
• 2 teaspoons grated ginger (or ginger paste);
• 6 cloves of garlic;
• 2 teaspoons Gram Masala;
• 2 teaspoons paprika;
• 2 teaspoons cumin;
• 2 teaspoons turmeric;
• 3 teaspoons salt;
• 400g diced tomatoes;
• 0.4L chicken base soup (you can find the recipe here);
• 100ml cooking cream.
• 1/2 teaspoon cinnamon;
• 1/2 lemon juice;
• 1 teaspoon sugar.
METHOD OF PREPARATION:
1. I cut the chicken thighs into smaller pieces. In a bowl I put the yogurt, a teaspoon of paprika, one of Gram Masala, one of salt, one of cumin, one of turmeric, one of ginger, two of tomato sauce concentrate, cinnamon and three crushed garlic cloves. I put the chicken thighs in the resulting composition and mixed them. I left the thighs to marinate until I took care of the dough for the pitas.
2. In a large frying pan I put the butter and oil. When they were hot, I added the chicken pieces and browned them nicely on both sides.
3. I took out the chicken and in the same frying pan I added the onions cut into strips. I sautéed for 5 minutes and then added a teaspoon of ginger paste, two teaspoons of tomato paste concentrate and three crushed garlic cloves.
4. I sautéed for two minutes and added the rest of the spices, the diced tomatoes, the chicken stock and the lemon juice. I left everything to simmer for about 15 minutes.
5. I added the cooking cream and used a hand blender to turn the mixture into a smooth sauce. Then, I placed the browned chicken back into the pan and let it cook for another 5 minutes.
PITAS INGREDIENTS (6 PITAS):
• 280g flour;
• 200g lukewarm water;
• 1 teaspoon dry yeast;
• 1 teaspoon sugar;
• 1 tablespoon oil;
• 1-2 teaspoons salt;
• 20g butter;
• 3 cloves of garlic;
• 1 small bunch of parsley.
METHOD OF PREPARATION:
1. In a bowl, I put the lukewarm water, sugar and yeast. I mixed and set aside for 5-7 minutes.
2. I added the flour, salt and mixed. When the dough started to form, I added the oil and started kneading until I obtained a non-sticky dough. If necessary, you can add a little more flour. I left the dough to rise in a buttered bowl until it doubled in volume.
3. I divided the dough into 6, shaped each part into a ball and stretched them with a rolling pin. I baked the pitas in a pan over medium to low heat.
4. I took them out on a plate and greased them with a composition made of melted butter, crushed garlic and chopped parsley. I put a lid over them until all the pitas were ready.
RICE INGREDIENTS:
• 1 cup basmati rice;
• 2.5 cups water;
• 50ml hot water;
• 1 onion;
• 15g butter;
• 2 tablespoons oil;
• 1/2 teaspoon saffron;
• 1 teaspoon salt.
METHOD OF PREPARATION:
1. I put the saffron in a small bowl and poured ~50ml of hot water over it.
2. I put the butter and oil in a high-sided pan. When they were hot, I added the finely chopped onion. I sautéed for about 5 minutes, then I added the rice that I had washed very well beforehand and the salt. I sautéed for another two minutes.
3. I added the 2.5 cups of water along with the saffron-infused water. I brought everything to a boil, then reduced the heat to low.br>4. After 10 minutes I turned off the heat, put the lid on and let the rice absorb the rest of the liquid.
5. When the time was up, I added the finely chopped parsley and mixed.
