MEATBALL INGREDIENTS:
• 500g chickpeas left to hydrate for at least 12 hours (DO NOT use boiled chickpeas, it does not have the same consistency);
• 30g coriander (I used a 30g pack of coriander, including the stems);
• leaves from a generous handful of parsley;
• 2 tablespoons olive oil;
• 1 teaspoon salt;
• 1/2 teaspoon pepper;
• 1/2 teaspoon cumin;
• 1 generous teaspoon granulated garlic (you can also use fresh garlic, I didn't have any);
• 1/4 cinnamon.
METHOD OF PREPARATION:
1. I placed all the ingredients in the chopper and blended everything together.(I shredded in two rounds).
2. I formed the meatballs and placed them on a tray lined with baking paper. I got 15 in total.
3. I put the tray in the oven preheated to 200*C for 25 minutes.
4. I took them out of the oven and left them for another 5 minutes in the tray. I ate them with tahini sauce.
TAHINI SAUCE INGREDIENTS:
• 2 generous tablespoons of tahini;
• 7 tablespoons hot water;
• 1/2 teaspoon salt;
• 1/2 teaspoon granulated garlic;
• 1/2 lime or lemon juice.
METHOD OF PREPARATION:
I mixed tahini with the spices. I gradually added water, one tablespoon at a time. At the end, I put the lime juice.
I ate with a slice of toast, avocado and a side salad.
For the salad I used: carrot, couscous, half an apple, pomegranate, salt, pepper, lemon juice.
Good appetite!
