Zucchini fritters

Every summer vacation at my grandparents' house, my grandmother would make me these zucchini fritters. Not just once or twice—she made them for me even four times during my stay. I absolutely love them!

INGREDIENTS:

• 2 zucchini;
• 1 small onion;
• 3 cloves of garlic;
• 2 large slices of bread;
• 1 bunch of parsley;
• 1 egg;
• salt, pepper;
• 5 tablespoons of flour;
• oil for frying;
+ optional for serving: cream, cheese.

METHOD OF PREPARATION:

1. I grated the zucchinis, sprinkled salt on top and set them aside for 10 minutes.
2. In a bowl I put: the finely chopped onion, the crushed garlic, the chopped parsley, the bread that I soaked in water, squeezed well and chopped, the egg, salt, pepper and the zucchini that I had squeezed very, very well. I mixed.
3. I then added the flour and mixed well. If the composition is too soft , you can add more flour.
4. I heated a pan on the stove, added 3 tablespoons of oil, and once it was hot, I shaped the fritters using a tablespoon of the mixture and placed them in the pan. CAREFUL! We don't have to make the fritters very thick.
5. I let them brown on both sides, then transferred them to a plate to cool slightly.

You can enjoy them plain or topped with sour cream and a sprinkle of cheese, just like I showed in the clip.
