Chocolate banana bread

What do you do when you have a few ripe bananas ready to be noticed?! Chocolate banana bread.. OBVIOUSLY!

INGREDIENTS:
• 2 eggs;
• 50g brown sugar;
• 350g mashed bananas (I had 2);
• 110g Greek yogurt 10%;
• 1 teaspoon baking soda;
• 1 teaspoon baking powder;
• 190g flour;
• 60g melted butter 82%;
• 100g chocolate drops;
• 5g cocoa;
• a pinch of salt;
• 1/2 essence of rum.
METHOD OF PREPARATION:
1. I beat the eggs with a whisk until they lightened a little, at which point I added the sugar. I beat everything for about another minute and added the rest of the wet ingredients (mashed bananas, Greek yogurt, melted butter and rum essence), baking soda and mixed until I had a homogeneous composition. I left the composition for about 10 minutes "at rest". 😄
2. I mixed the dry ingredients (baking powder, flour, cocoa, salt) separately.
3. I poured the composition of dry ingredients over the wet ones, homogenized and added 80g of chocolate drops.
4. I transferred everything onto a baking tray lined with parchment paper and sprinkled the remaining 20g of chocolate drops on top.
5. I put everything in the preheated oven (170*C). After 1 hour, I turned off the oven and left the banana bread in the oven for another 10 minutes, without opening the door.
6. I removed it from the pan and placed it on a wire rack. I let it cool completely and then put it in the fridge overnight.
