INGREDIENTS:

• 2 eggs;
• 200g warm milk;
• 300g mineral water/soda;
• 240g flour;
• 2 spoons of sweetener;
• 1 pinch of salt;
• 2 teaspoons of vanilla essence.
+ oil for cooking them.

METHOD OF PREPARATION:

1. Beat the eggs, sweetener, and salt thoroughly for about 1 minute.
2. I then added 1/3 of the warm milk, followed by 2 tablespoons of flour, and mixed well with a whisk. I repeated this process until all the milk was incorporated.
3. After finishing with the milk, I gradually added the soda in the same way, alternating with the flour until both were fully incorporated. Finally, I added the essence and mixed everything together.
4. I left a pan on medium to low heat, put a little oil and spread it over the entire surface of the pan with the help of a kitchen napkin.
5. I poured 3/4 of a ladle of the mixture into the pan, cooking the crêpe for about 1 and a half minutes on one side, then another minute on the other side.
6. I repeated this process until I ran out of composition.

While the pancakes were cooking, I kept the finished ones under a plate so that they remained soft, the edges did not harden.
