Pancakes with oats and banana

INGREDIENTS (2 SERVINGS):

• 1 well-ripened banana;
• 1 egg;
• 100g milk;
• vanilla essence;
• 120g oat flakes;
• 1/2 teaspoon baking powder;
• a pinch of salt.
+ for serving: yogurt, fruit, mixed seeds and nuts;
+ for cooking: coconut oil/butter.

METHOD OF PREPARATION:

1. I mashed the banana and put the egg, milk and essence on top of it. I mixed very well.
2. I then added the rest of the ingredients and mixed.
3. I left a pan on low heat and greased it with coconut oil. I then formed the pancakes. I browned them nicely on both sides.
4. I placed a saucepan over low heat and added 60g of frozen fruit. I let them cook for 3-4 minutes.
5. I spread two generous spoons of yogurt on a plate, then placed four pancakes on top. I added half of the berries and sprinkled a teaspoon of seed and nut mix over everything.
