"Cozonac"

There is no holiday meal without "cozonac"!! 🤤

INGREDIENTS:

• 800g flour;
• 8 eggs;
• 380g lukewarm milk (+4 tablespoons for greasing the cakes);
• 120g butter;
• a large orange (or lemon, we'll only use the peel);
• 10g dry yeast;
• 250g powdered sugar;
• 120g white sugar;
• 1 teaspoon salt;
• 50g cocoa;
• 1 1/2 rum essence;
• 200g chopped walnuts;
• optional: 2 tablespoons brown sugar;
• 1 tablespoon oil.

METHOD OF PREPARATION:

1. In a bowl, I put the flour, salt, powdered sugar and dry yeast (I used a yeast that does not need to be activated before use). I mixed it.
2. I separated the eggs.
3. Over the composition obtained earlier, I put 7 yolks, the grated orange peel and the lukewarm milk. I mixed with a spoon until the dough began to form and then I started kneading by hand.
4. After about two minutes, when all the flour was incorporated into the dough, I added 110g of butter at room temperature. I kneaded for 7-8 minutes until the butter was fully absorbed, resulting in a soft, non-sticky dough. If needed, you can add a little more flour.
5. I transferred the dough to an oiled bowl, covered it with cling film and left it to rise until it tripled in volume (~2.5h).
6. I prepared the filling before I started shaping the "cozonac". I put 4 egg whites (I used 4 of the 8; from the remaining 4 egg whites I made an omelet), the sugar and mixed until I obtained a stiff foam. I added the chopped walnuts, cocoa and essence. I mixed until I obtained a homogeneous consistency.
7. I divided the dough into 6 equal pieces and gave them the shape of a ball.
8. I stretched each ball into a rectangle and spread 3 tablespoons of the mixture over them, leaving 2 cm of free dough along one edge. I started rolling lengthwise from the edge covered with the mixture toward the free edge. I sealed the resulting roll to prevent the filling from escaping. I repeated the process with the remaining pieces of dough.
9. I formed a cake from two pieces of dough that I braided. I transferred them to trays greased with butter (the remaining 10g of butter).
10. I covered the trays with cling film and a towel and left them to rise for 40 minutes.
11. I put the trays in the preheated oven at 180*C on the lowest setting (top-bottom heat) and baked them for an hour. Halfway through the time I put a baking paper on top of them.
12. I took them out of the trays, placed them on a rack and let them come to room temperature before cutting them. 🎄
