INGREDIENTS:

• 200g cranberries;
• 1 orange;
• 3-4 tablespoons honey;
• 150ml water;
• 1 teaspoon cinnamon;
• 400g puff pastry;
• 200g Brie cheese;
• 3 sprigs of rosemary;
• 40g pecans;
• 1 egg.

METHOD OF PREPARATION:

1. In a pot over medium to low heat, I combined cranberries, water, grated orange peel, orange juice, honey, and cinnamon. I stirred the mixture and let it simmer until it reached a jam-like consistency. I mixed constantly to prevent the composition from sticking to the pot.
2. I cut the puff pastry into 20 equal pieces. I then stretched them a little in my hand and placed them in the silicone molds. If you have one, you can use a muffin tray and grease the molds with a little oil or butter before placing the pieces of dough in it.
3. I took the Brie cheese out of the freezer and cut it into small cubes.
4. I placed 2-3 pieces of cheese in each mold, and on top I put a generous teaspoon of jam and sprinkled chopped nuts. I brushed the corners of the puff pastry with beaten egg.
5. I put the tray with the shapes in the preheated oven at 200*C for ~18 minutes.
6. I took the tray out of the oven, let the puff pastry cool a little and then sprinkled some chopped fresh rosemary on top. If you're not a fan of rosemary, you can omit it.
