More precisely, gnocchi with zucchini. It comes together so quickly you won’t even realize it’s ready. And should I mention that it’s absolutely delicious?! 🥰

INGREDIENTS(ONE SERVING):

• 200-250g gnocchi (I used the ones with mozzarella and tomatoes);
• 1 small zucchini or 1/2 medium-sized zucchini;
• 1 teaspoon lemon juice;
• a small cube of butter;
• 1 clove of garlic;
• salt, pepper, chilli flakes;
• 15g parmesan;
• fresh basil.

METHOD OF PREPARATION:

1. I left a pot of water boiling and put half a teaspoon of salt in it.
2. I cut the zucchini into larger cubes.
3.I heated a deep-sided pan, added the butter, and once it melted, I tossed in the zucchini. When it started to brown, I added the crushed garlic.
4. I put the gnocchi in the boiling water and left them until they rose to the surface (~2 minutes).
5. I transferred them over the zucchini, sprinkled everything with lemon juice, seasoned and mixed well. I left everything to cook for another minute. If you find that the mixture seems too dry, you can add an extra 1-2 tablespoons of the water used to cook the gnocchi.
6. I put everything on a plate and decorated with pieces of parmesan and fresh basil.
