Halloumi and baked vegetables

I set the meat aside for tonight's recipe. 😁

INGREDIENTS:

• 1 sweet potato (medium size);
• 1 white potato (medium size);
• 1 can chickpeas;
• 3 small carrots;
• 1 medium onion;
• 150g cherry tomatoes;
• 225g halloumi cheese;
• 1 cube butter;
• 1 teaspoon pesto;
• salt, pepper, thyme, basil, garlic powder, olive oil.
METHOD OF PREPARATION:
1. I cleaned the vegetables and washed them.
2. I diced the potatoes, sliced the onion, cut the carrots in half, and drained the chickpeas very well.
3. I put all the vegetables in a bowl, added the spices and olive oil and mixed very well. I transferred everything to a heat-resistant dish and put it in the preheated oven (200*C) for 1 hour & 10 minutes. During this time, I mixed 3 times.
4. I cut the cheese into strips of approximately 1.5cm and patted it with paper towels.
5. I put the butter in a pan, over medium heat. After the butter melted, I added the cheese and fried it for approximately 2 minutes on each side. Finally, before taking it out, I spread it with a little pesto.
