Vegetables with tofu

INGREDIENTS:
• 1/2 pepper;
• 1/2 zucchini;
• 1 carrot;
• 1/2 onion;
•1 teaspoon olive oil;
• 60g smoked tofu;
• 100ml coconut milk;
• salt, pepper, garlic powder, chilli flakes;
• 7g walnuts;
• 30g couscous.
METHOD OF PREPARATION:
1. I cut the vegetables into thin strips.
2. I heated some oil in a pan with high walls, then added the vegetables. I sautéed them on low heat for about 7 minutes.
3. I added the coconut milk, spices, diced tofu and mixed. I left everything on low heat for about 7 minutes.
4. I served alongside the couscous that I prepared according to the instructions on the package and added some chopped walnuts on top.
