Mushroom dish with coconut milk

INGREDIENTS:

• 500g Pleurotus mushrooms, cut into strips;
• 1 can of coconut milk;
• 8 cherry tomatoes;
• 2 tablespoons olive oil;
• 1 medium onion, diced;
• 1/2 teaspoon salt;
• 1/2 teaspoon pepper;
• 1 teaspoon garlic powder;
• 1 teaspoon sweet paprika.

METHOD OF PREPARATION:

1. I put the mushrooms and oil in a pan, turned on the heat and waited for it to reduce in volume. I stirred periodically.
2. When the mushrooms started to brown, I added the onion and sautéed for 3-4 minutes. I turned the heat to medium during this step.
3. When the time was up, I added the cherry tomatoes cut in half, the spices and the coconut milk. I mixed well and let it simmer for about 10-12 minutes.
4. Finally I added chopped parsley and served with rice. It was a really good lunch! 🔥
