INGREDIENTS (3 SERVINGS):

• 100g soy cubes;
• 1 onion;
• 250g carrots;
• 200ml coconut milk;
• 300ml water;
• 1 tablespoon oil;
• spices: salt, pepper, smoked paprika, granulated garlic, cumin;
• 2 generous teaspoons of concentrated tomato paste;
• fresh parsley and lime/lemon juice for serving.

METHOD OF PREPARATION:

1. I brought a pot of water to a boil, then added the soy and let it cook for 10 minutes.
2. I sautéed the onion in a tablespoon of oil for 5 minutes until it became soft and fragrant. I added the thinly sliced ​​carrots, sautéed for another 3 minutes and then added the coconut milk and water. I stirred everything together and let it simmer.
3. When the liquid was reduced by half, I added the drained soy, the spices and the tomato paste. I mixed and left everything for ~4 minutes.
4. Finally, I sprinkled the finely chopped parsley and drizzled with lime juice. I ate this dish with couscous, but you can choose your favorite side dish. 🤗
