Bean stew

For those following a vegan diet, or for anyone looking for something simple and delicious.

INGREDIENTS:
• 300 g boiled red beans;
• 250 g diced tomatoes;
• 1 medium onion;
• 4 cloves of garlic;
• 1 teaspoon thyme;
• salt and pepper to taste;
• fresh parsley.
METHOD OF PREPARATION:
1. I finely chopped the onion and garlic.
2. I sautéed them in a tablespoon of oil for 3-4 minutes.
3. I put the tomatoes, spices, beans and mixed well.
4. I left everything on low heat for 7-8 minutes.
5. I sprinkled fresh parsley and served it with toasted bread.
