INGREDIENTS:

• 400g flour;
• 80g butter;
• 250g water;
• 1 teaspoon vinegar;
• 150g feta cheese;
• 150g telemea cheese;
• 2 eggs;
• 30g semolina;
• 1/2 teaspoon salt.
+ oil for greasing the worktop.

METHOD OF PREPARATION:

1. I put the flour, salt, water and vinegar in a bowl. I stirred the mixture with a spoon until the dough began to form, then kneaded it for 7-8 minutes.
2. I divided the dough into 8 balls of about 80g each.
3. I oiled the work surface, placed a dough ball on it, shaped it into a square with my hands, and then rolled it out thoroughly with a rolling pin.
4. I spread 10g of butter on the dough, folded it into a square, and wrapped it in plastic wrap. I repeated this process for the remaining pieces.
5. I placed them in the fridge for at least 2 hours (you can also leave them overnight).
6. For the filling, I grated the cheese, added the egg whites and semolina, and mixed until well combined.
7. I took the dough pieces from the fridge, greased the work surface with oil, and rolled each one out thoroughly. Then, I placed the filling in the center, spread it evenly, and folded the dough over (see the steps in the video).
8. I arranged them on a baking tray lined with parchment paper, brushed them with egg yolk, and put the tray in a preheated oven at 220°C for 20-25 minutes.
9. I left them on a wire rack to cool a bit and savour them right after! 😍
