INGREDIENTS:

• 400 g potatoes (weighed after cleaning)
• 500 g minced chicken breast
• 80 g onion (1 medium-sized onion)
• 50 g carrot (1 medium-sized carrot)
• 2 eggs150 g Greek yogurt 2%
• 275 g diced tomatoes
• 100 g mix of cheeses
• 5 ml olive oil
• 1 teaspoon salt
• 1/2 teaspoon pepper.

METHOD OF PREPARATION:

1. I peeled, washed, and boiled the potatoes.
2. Finely chop the onion and grate the carrot.
3. I sautéed them in a spoonful of oil for 3-4 minutes.
4. I added the chicken breast and mixed everything thoroughly.
5. Once it started to brown, I seasoned it with salt and pepper, added the diced tomatoes, mixed well, and let it cook on low heat for 5 minutes.
6. In a bowl, I whisked the eggs, then added the yogurt, salt, and pepper, mixing until the mixture was smooth and well combined.
7. When the potatoes were cooked, I cut them into thin slices.
8. I assembled the moussaka in two smaller trays, but you can assemble it in a larger one.
9. I put in each tray: a thin layer of sauce, a layer of potatoes, half the amount of meat, a layer of sauce, a layer of potatoes and another layer of sauce.
10. At the end, I sprinkled the cheese mix on top and placed the trays in the preheated oven at 180°C for 25-30 minutes.
