INGREDIENTS:

• 250g chicken breast;
• 120g rice;
• 1 medium onion;
• 1 tablespoon oil;
• 1 generous tablespoon coconut milk;
• 6 cherry tomatoes;
• 350ml water;
• salt, pepper to taste;
• 1/2 teaspoon turmeric.
+ Optional: fresh parsley.

METHOD OF PREPARATION:

1. Finely chop the onion and saute for 3-4 minutes in a tablespoon of oil.
2. After the time was up, I added the diced chicken breast and let it brown.
3. I added the well-washed rice, seasoned it, put the water (which I heated separately before, it speeds up the cooking process), mixed it and left everything on medium heat until the water was reduced to a little under half.
4. I lowered the heat, added the coconut milk and quartered cherry tomatoes, mixed everything together, and covered the pan with a lid. I let it cook for another 5 minutes.
5. At the end I sprinkled fresh parsley.
