Turkish eggs
If you too have run away from them until now, don't do it again! They are really good! There is nothing to be afraid of in the combination of textures and tastes. 😁

INGREDIENTS:
• 200g Greek yogurt (I used 10%);
• 4 eggs;
• 10g butter;
• 1 teaspoon olive oil;
• 1/ teaspoon chili flakes;
• 2 cloves of garlic;
+ optional: a little dill for serving, toasted bread.
METHOD OF PREPARATION:
1. I placed a pot of water on the stove, and just before it reached the boiling point, I lowered the heat. Using a spoon, I stirred the water to create a vortex, then gently slid in an egg that I had previously cracked into a bowl. After 1 minute, I moved it a little with the spoon so that it does not stick to the pot.
2. I let the egg sit in the water for 3-4 minutes, depending on personal preference for how well-cooked you want it. After removing it from the water, I placed it on a kitchen towel. I did the same with all 4 eggs.
3. After finishing with the eggs, I placed a plate over the pot and added the yogurt along with the grated garlic. I mixed it well and kept it there until the yogurt turned into a paste and became a little warm (about 2 minutes).
4. In a kettle I put the butter, oil and chilli flakes. I put it on a low heat and mixed very well, so as to obtain a homogeneous composition. Simmer for about 1 and a half minutes on low heat.
5. The last part is the assembly. I took a plate, put the yogurt, the eggs and the "sauce" of oil and butter.
6. I served it with toast and it was wow. ❤️
Good appetite!
Simona.
