Pancakes with ricotta

INGREDIENTS:
• 2 eggs;
• 250g ricotta;
• 340g water;
• 370g flour;
• 1 lemon;
• 2 teaspoons vanilla essence;
• 1 teaspoon baking soda sodium;
• 1 teaspoon baking powder;
• 45g butter;
• 1 pinch of salt;
• 4-5 drops of sweetener (or two tablespoons of sugar).
+ optional : 100g Gorgonzola.
METHOD OF PREPARATION:
1. Crack the eggs into a bowl and mix well.
2. I added the ricotta on top and mixed.
3. Then I put the water, the essence, the sodium bicarbonate (if you use sugar as a sweetener, you can add it with the bicarbonate), finely grated lemon peel, the juice of half a lemon, the essence and 15g of melted butter. I mixed well.
4. Separately, I mixed the flour, baking powder and salt.
5. I gradually added the dry composition over the wet. At the end I added the sweetener.
6. I left the pancake pan on medium to low heat, and when it heated up, I put in a cube of butter. I spread it with a brush and formed the pancakes. I baked them for ~2 minutes on one side and another 1 minute on the other side.
7. If you want to go a little outside the box and try something new, I recommend putting a few pieces of Gorgonzola on top of the pancakes after forming them and then putting a little more mixture on top to seal them. I left these on the fire a little longer (about two minutes on each side).
8. I ate them with the strawberry jam and they were DELICIOUS! 🤍🥞
