"Papanași"

Along with pancakes and donuts, papanași remind me of my childhood.

INGREDIENTS(AT ROOM TEMPERATURE):

• 350g fresh cow cheese;
• 2 eggs;
• 200g flour;
• 1 teaspoon baking powder;
• grated zest of one lemon;
• 2 tablespoons sugar;
• 1 vanilla essence;
+ for frying: 500ml oil;
+ for serving: sour cream and jam.
METHOD OF PREPARATION:
1. I mixed the eggs and sugar until they doubled in volume.
2. I added the well-drained cow cheese (depending on how wet it is, you may need a little more flour), the lemon zest and the essence. I mixed until I obtained a homogeneous composition.
3. I mixed the flour with the baking powder and added them to the wet composition. I mixed with a spatula until I obtained a slightly sticky dough.
4. I put the oil in a pot. While the oil was heating, I shaped the papanași. I greased my hands with oil to make them easier to shape.
5. I browned the papanași nicely and took them out on kitchen towels to remove the excess oil.
6. I ate them with sour cream and strawberry jam. They were delicious! 🤍
For a healthier option:
1. I placed the papanași on a baking sheet lined with baking paper and brushed them with egg yolk mixed with a little milk.
2. I placed the tray in the oven preheated to 180*C and left them until they were nicely browned.
3. I served them with Greek yogurt and strawberry jam.
