INGREDIENTS:
• 400g mushrooms;
• 2 medium-sized onions;
• 5 cloves of garlic;
• 2 tablespoons of oil;
• 100ml coconut milk;
• salt, pepper;
• 1/4 teaspoon nutmeg;
• 70g walnuts;
• 3 sprigs of fresh thyme.
METHOD OF PREPARATION:
1. I sautéed the onion for 4 minutes in two tablespoons of oil.
2. I added the garlic and sautéed for another 2-3 minutes.
3. I added the sliced mushrooms, spices and left everything on medium heat for ~8 minutes, during which time the mushrooms started to brown and reduced considerably in volume.
4. I added the coconut milk and left it on the fire for another 5 minutes. I removed the sprigs of thyme.
5. I roasted the walnuts in the pan.
6. I put the mushrooms and nuts in a chopper and mixed for 2 minutes.
7. I transferred the composition to a bowl, and on top I put a little olive oil and sprigs of fresh thyme.
