INGREDIENTS:
• 500g chicken livers;
• 2 medium onions;
• 5 cloves of garlic;
• 110g butter 82% fat;
• 1 tablespoon olive oil (or sunflower);
• 2 bay leaves;
• 3 sprigs of fresh thyme (or a teaspoon of dried thyme);
• 100ml rosé wine (optional);
• salt, pepper;
• a generous handful of cranberries/raisins;
• 200ml cooking cream.
METHOD OF PREPARATION:
1. I cleaned the livers and boiled them. I boiled them for ~15 minutes and took the foam that formed as many times as needed.
2. In a pan I put 70g of butter and the oil. I waited for it to heat up and added finely chopped onion and garlic. I sautéed for 5 minutes, during which the onion became translucent.
3. I added the thyme, the bay leaves torn in half, the spices and the wine to the pan. I waited for the composition to boil and then I put the chickpeas. I left it on the fire for about 5 minutes (in the middle of the time, I turned the livers). I removed the thyme sprigs and bay leaves.
4. I waited for the whole composition to cool down a bit and then I transferred it to a bowl. I put the cooking cream on top of it and mixed until I got a fine paste. If you prefer not to add wine, in this step you can add another 50ml of water (if you have the impression that the composition is too strong). I put a generous handful of cranberries in the composition and mixed with the spatula.
5. I transferred the composition to the dishes, leveled it and poured on top the rest of the butter that I had melted before. I decorated with sprigs of thyme and cranberries. That's it!
It needs to stay in the fridge for a good few hours. I left it overnight. 🤗
