Spinach pie

For those moments when you're craving pastries or when that bag of spinach has been sitting in the freezer for ages and you have no idea how to "use it up"—just like I did. 😁

I have selected some recipes that you might like:

INGREDIENTS:

• 450g spinach (I used frozen);
• 250g cheese;
• 5 cloves of garlic;
• 3 green onions (you can also use regular onions);
• 1 bunch of dill;
• 1 bunch of parsley;
• 1 teaspoon pepper;
• 2 eggs;
• 45g butter;
• 9 sheets of pastry.

METHOD OF PREPARATION:

1. I put 10g of butter in a pan. I put it on the heat and when the butter melted, I added the spinach (the night before I took it out of the freezer and put it in the fridge), the onion, the dill, the parsley, the garlic and the pepper. I sautéed everything for about 10 minutes, long enough for the water in the spinach to evaporate.
2. I transferred everything to a bowl and added the grated cheese and an egg. I mixed it.
3. I melted the rest of the butter for a few seconds in the microwave.
4. I took a sheet of pastry and brushed it with butter. On top, I placed another sheet of pastry and buttered that as well. I added a third sheet and repeated the buttering process. On the third sheet, I spread 1/3 of the filling evenly across the surface, leaving about 2 cm free along one of the long edges. Starting from the opposite edge, I carefully rolled the pastry lengthwise toward the free edge.
5. I did the same with the rest of the ingredients. In total I got 3 long pieces of pie.
6. I placed them in a tray, brushed them with egg and put the tray in the preheated oven (180*C) for 40-45 minutes.
7. It is absolutely necessary to serve with Greek yogurt on top!
