INGREDIENTS:

• 250g pumpkin puree;
• 3 eggs;
• 65g coconut oil;
• 70g sweetener of your choice (I used stevia);
• 1 rum essence;
• 2 teaspoons baking powder;
• 200g flour;
• a pinch of salt;
• 50g chocolate.

TOPPING INGREDIENTS:

• 200g Greek yogurt;
• 2 tablespoons agave syrup or honey;
• a handful of chopped nuts.

METHOD OF PREPARATION:

1. I cleaned the pumpkin of seeds, cut it into smaller pieces and placed them on a tray lined with baking paper. I placed the tray in the preheated oven at 200°C and baked it until a fork easily pierced the pumpkin.I removed the pulp from the peel and let it cool a little. I then transferred it to a chopper and mixed until I obtained a paste.
2. In a large bowl I put 3 eggs, the pumpkin puree, coconut oil, essence and sweetener. I mixed until I obtained a homogeneous consistency.
3. I sifted the flour and baking powder over it, added the salt and mixed. I then added the chopped chocolate, mixed and transferred the composition to a tray lined with baking paper.
4. I put the tray in the preheated oven at 180*C for about 40 minutes.
5. I transferred the cake to a wire rack and let it cool until it reached room temperature.
6. I mixed the yogurt with the agave syrup and spread it over the cake. Finally, I sprinkled the chopped nuts.
