Cake with yogurt and cherries

INGREDIENTS:
• 250g pitted cherries;
• 6 eggs;
• 100g sugar;
• 200g flour;
• 200g Greek yogurt 2%;
• 80g sunflower oil;
• 1 spoon of cocoa;
• peel of a lemon (or any essence according to preferences);
• 1 packet of baking powder;
• 1 teaspoon of corn starch.
METHOD OF PREPARATION:
1. I allowed all the ingredients to come to room temperature. I separated the eggs.
2. I beat the egg whites. I added the sugar and continued mixing until it dissolved completely, resulting in a firm, frothy consistency.
3. I added the yogurt and lemon peel over the yolks. I mixed until I got a homogeneous composition and I gradually poured in the oil(as with mayonnaise).
4. With the help of a spatula I carefully incorporated the egg yolk composition into the foam.
5. Separately, I mixed the flour and baking powder well.
6. I sifted the flour and baking powder over the composition obtained earlier and homogenized it.
7. I lined a tray (dimensions ~ 26×19) with baking paper and put 3/4 of the composition in it, and over the remaining one I sifted the cocoa and mixed. I spooned the mixture into the tray in different spots, and then used a toothpick to swirl them together
8. I alternately placed the pitted cherries, which I had previously mixed with cornstarch.
9. I put the tray in the oven preheated to 160*C for about an hour (until it passed the toothpick test).
