Blueberry cake, no added sugar, baked in the Air Fryer

I was craving something delicious, but I didn't have much time and didn't even think about turning on the oven.🙈 Instead, I plugged in the Air Fryer!😁

INGREDIENTS:

• 3 large eggs (at room temperature);
• 90g oat flour;
• 1 teaspoon of baking powder;
• 125g blueberries;
• 1 teaspoon of vanilla essence;
• 1 pinch of salt.
+ for the syrup: 100ml warm water and a generous spoonful of honey.
+ a little oil and flour for greasing the pan.

METHOD OF PREPARATION:

1. I separated the whites from the yolks.
2. I added salt to the egg whites and beat them until they form a hard foam.
3. I poured the essence over the yolks and mixed it before pouring it over the whites. I used a spatula to homogenize the mixture by moving from the bottom up.
4. I mixed the baking powder with 85g of oat flour and gradually sifted the obtained composition over the eggs (in 3 rounds). I homogenized with a bottom-up motion after each turn.
5. I greased the pan with a little oil, lined it with flour and poured the composition into it. I put it in the Air Fryer at 160*C for 25 minutes.
6. I thoroughly mixed the lukewarm water with honey and poured it over the hot cake.
7. I waited for it to cool before serving it. If you prefer it sweeter, you can sprinkle honey on top or you can serve it in combination with yogurt.

This was my first time using the Air Fryer to make a cake, but it won't be the last! 😍

If you don't have an Air Fryer, you can put it in the oven. 🤗
