Chicken with vegetables

I present to you an improvised lunch. :)) If you want, it can also be served as dinner. 😁

INGREDIENTS:

• 2 pieces of chicken breast;
• 1 bell pepper;
• 250g tomatoes;
• salt, pepper, garlic powder, sweet paprika, hot paprika, chilli flakes, curry;
• 2 tablespoons olive oil;
• 150ml coconut milk;
• fresh basil.
METHOD OF PREPARATION:
1. I cut the chicken pieces lengthwise, in half. (I got 4 fillets)
2. I put the spices and oil over the chicken. I mixed well.
3. I placed the chicken pieces on a hot pan and cooked them for 3-4 minutes on each side until they were beautifully browned.
4. After the chicken was browned, I added the pepper cut into strips. I sautéed for 3-4 minutes together with the chicken and then I added the diced tomatoes. I sautéed for 2-3 minutes more.
5. After the tomatoes started to soften, I added 150ml of coconut milk and let it boil for 4-5 minutes, until it thickened a little.
6. I turned off the heat and added the fresh basil on top. 💚
P.S.: I ate it with lettuce. You can also eat it with mashed potatoes or rice. Or.. whatever you want. 🤗
