INGREDIENTS (3 SERVINGS):
• 600g chicken breast (or boneless chicken thighs);
• 200ml cooking cream;
• 50g cream cheese;
• 2 teaspoons tomato concentrate;
• 20g parmesan;
• 250g cherry tomatoes;
• a generous handful of spinach;
• 1 1/2 tablespoons oil;
• 10g butter;
• salt, pepper;
• 1 teaspoon smoked paprika;
• 2 teaspoons chili flakes;
• 3 cloves garlic.
METHOD OF PREPARATION:
1. I cut the chicken into cubes and seasoned it with salt, pepper, a teaspoon of chili flakes, a teaspoon of sweet smoked paprika, crushed garlic and half a tablespoon of oil. I mixed it very well.
2. In a high-sided pan I put a tablespoon of oil and butter. When they were hot, I added the chicken. I left it to brown nicely.
3. In a high-sided container I put the cooking cream, cream cheese, tomato concentrate, parmesan and a teaspoon of chili flakes. With a vertical mixer I turned everything into a paste.
4. Over the browned chicken I put the paste obtained earlier, the tomatoes cut in halves and the spinach. I mixed well, put the lid on and left everything on low heat for another 6 minutes.
RICE INGREDIENTS:
• 1 bowl of well-washed rice;
• 2 1/2 bowls of water;
• 1 teaspoon of salt.
METHOD OF PREPARATION:
1. I put all the ingredients in a pot over medium heat. 2. I let everything simmer for 10 minutes after the water came to a boil. I stirred once halfway through.
3. After 10 minutes I turned off the heat, put a lid on top, and left the rice for another 10 minutes with the lid on to absorb the rest of the liquid.
