Baked chicken legs and rice

INGREDIENTS:

• 4 chicken thighs seasoned the night before(I seasoned them with salt, pepper, granulated garlic, oil and 3 teaspoons of Thai Curry Paste);
• 1 onion;
• 2 peppers;
• 2 carrots;
• 1 parsnip;
• 300g well-washed rice;
• 1L of hot water;
• salt, pepper;
• a bunch of parsley ;
• 15g of butter.

METHOD OF PREPARATION:

1. I put the diced vegetables, butter and spices in a large pan. I mixed and leveled.
2. I placed the chicken legs on top, and then I added the water.
3. I covered the pan with aluminum foil and put it in the preheated oven at 200*C for 30 minutes.
4. I removed the aluminum foil, gently stirred the mixture with a spoon, and basted the thighs with the liquid from the tray.
5. I put the pan back in the oven and left it until the thighs were browned (~50 minutes). During this time, I removed the pan about 3 times and mixed in the composition.
6. At the end I sprinkled fresh parsley on top.
