Vegan biscuit salami

This biscuit salami recipe is the perfect vegan treat, made without margarine or added sugar.

INGREDIENTS:
• 250g vegan biscuits;
• 70g pitted dates (or 100g if you prefer it sweeter);
• 250g lukewarm water (or vegetable milk);
• 1 essence of rum;
• 3 teaspoons of cocoa;
• 80g chopped walnut.
METHOD OF PREPARATION:
1. I put warm water over the dates and left them to hydrate for 10 minutes.
2. I crumbled the biscuits and put 40g of walnut and cocoa on top of them. I mixed.
3. I put the dates and water in the chopper, added the essence and mixed. I transferred the composition over the biscuits and mixed very well.
4. I transferred the mixture onto a food foil and shaped it into a salami-like form.
5. I put it in the fridge overnight (you can also leave it for 2-3 hours).
6. The next day, I removed the salami from the foil and rolled it in the remaining 40g of chopped walnuts, covering it as evenly as possible.
