STUFFED CABBAGE ROLLS INGREDIENTS:
• 1kg minced turkey;
• 4 medium onions;
• ~120g rice;
• salt, pepper, thyme to taste;
• 1 egg;
• 120ml tomato paste ;
• 3 bay leaves;
• 1 large sauerkraut;
+ water.
METHOD OF PREPARATION:
1. In a bowl, I mixed the meat, egg, spices, well-washed rice, and finely chopped onion.
2. I unfolded the cabbage leaves, removed the thick end, and then cut them into 2 or 3 parts, depending on the size of the leaf.
3. On each cabbage leaf, I added a small amount of the filling and folded it tightly.
4. I placed the cabbage rolls in a pot, with a layer of chopped cabbage at the bottom. I left a small space in the middle of them and put the bay leaves and tomato paste.
5. I covered everything with cabbage leaves and put a plate on top.
6. I poured enough water to cover the rolls and left the pot on low heat for ~ 2 and a half hours. I added more water as needed.
POLENTA INGREDIENTS.
• ~650g of cornmeal + 4 more spoons;
• 2L water;
• salt;
• 3 spoons of wheat flour.
METHOD OF PREPARATION:
1. I prepared a thicker polenta using cornmeal and water, seasoning it with salt to taste.
2. In a bowl I mixed two spoons of wheat flour with two spoons of cornmeal. I sprinkled half of the mixture on the work surface and turned the polenta over onto it. I waited for it to cool down a bit, just enough to be handled comfortably with my hands.
3. While I waited for it to cool, I mixed in a bowl 2 spoons of polenta, 4 spoons of water and one spoon of wheat flour.
4. After the polenta cooled a bit, I kneaded it, incorporating the rest of the cornmeal mixed with wheat flour (obtained in point 2). I gave it an oval shape and placed it in a tray lined with baking paper on which I sprinkled two tablespoons of cornmeal.
5. I added the mixture from step 3 over it, and then used a fork to create some shapes on the surface.
6. I put the tray in the oven preheated to 240*C for about an hour.
Good appetite!
