INGREDIENTS:

• 500g fresh tomatoes;
• 5 eggs;
• 1 onion;
• 1 pepper;
• 100g tomato purée (or a spoonful of more concentrated tomato paste);
• 100g water;
• 1 teaspoon hot (or sweet) paprika;
• salt to taste;
• 35g cheese;
• 2 tablespoons oil;
• fresh parsley.

METHOD OF PREPARATION:

1. I finely chopped the onion and pepper. I scalded the tomatoes, removed their skin and chopped them into cubes.
2. I heated the oil in a high-sided pan over medium-low heat. Once warmed, I added the onion, pepper, and spices. I stirred and sautéed them for a few minutes.
3. I added the tomato purée, water, and diced tomatoes, then stirred, covered the pan, and let it simmer over medium-low heat for 15 minutes. Halfway through, I mixed in the composition.
4. I created 5 openings with the spatula, placed the eggs in them, and let everything cook for a few more minutes until the eggs are done.
5. I sprinkled cheese and fresh parsley on top and served it with toast.
