Creamy vegetable soup

My favorite, creamy vegetable soup! 🤤

INGREDIENTS:
• 1 large sweet potato;
• 3 medium-sized white potatoes;
• 2 carrots;
• 1 red bell pepper;
• 1 large onion (or two medium);
• 2 tablespoons of oil;
• 330ml water;
• 400ml coconut milk;
• salt, pepper.
METHOD OF PREPARATION:
1. I cleaned and washed the vegetables, chopped them, and seasoned them with salt, pepper, and two tablespoons of oil.
2. I placed them on a tray lined with baking paper and put the tray in the oven preheated to 200*C for 25 minutes.
3. I took them out, mixed them and put them in the oven for another 20 minutes.
4. I transferred them to a pan with high walls, added the coconut milk, water and left everything on medium heat for 10 minutes.
5. I let them cool down a bit and crushed everything with a vertical blender. Now you can taste and add more spices according to your preferences.
6. We ate it with toast and it was delicious! 🧡
