Chicken dumpling soup

INGREDIENTS:
• the bone from a chicken breast (I left a little more meat on it when I deboned it);
• 1 medium onion;
• 3 carrots;
• 3.5L water;
• 2 eggs (~118g);
• ~118g semolina;
• 1 tablespoon of oil;
• salt;
• fresh parsley.
METHOD OF PREPARATION:
1. I had a chicken breast that I deboned, trying to leave a little more meat on the bone.
2. I boiled the bone in 3.5L of water, and when the water was close to the boiling point, I removed the foam.
3. I put the onions and carrots in the pot and let everything boil.
4. I beat the eggs well, added the oil, a pinch of salt and mixed. I then added the semolina and homogenized. I used the same amount of semolina and eggs. The semolina I used is a fine textured semolina. One difference I noticed between this smaller version and the larger one is that it requires more cooking time; however, the dumplings still come out just as fluffy. I left the composition on the kitchen counter for ~10 minutes.
5. When the meat and vegetables were cooked, I removed them from the pot and seasoned the soup with salt. I only use salt for this soup.
6. I turned the heat to low and formed the dumplings with a spoon. In order for the composition to come off the spoon nicely, I keep it in the hot soup for a while and then take the composition. Because I like larger dumplings, I form a dumpling from 2/3 spoon.
7. When I formed all the dumplings, I put the lid on and let them boil.
8. During this time, I finely chopped the carrots and the meat that I removed from the bone.
9. When the dumplings were almost cooked (I test them by sticking the tip of the knife into them), I added the carrots and the meat.
10. I left everything on the fire for a few minutes, and at the end I sprinkled fresh parsley.
