Cheese and tomato tart with a soft crust

DOUGH INGREDIENTS:

• 180g flour;
• 140g butter 82%;
• 50g grated parmesan;
• 1/2 teaspoon salt;
• 1 teaspoon oregano;
• 1 teaspoon basil.

FILLING INGREDIENTS:

• 4 tomatoes (of which I used 2 yellow ones);
• 150g cream cheese;
• 50g sheep's cheese (you can replace with any type of cheese you prefer);
• salt.
+ chives for decoration.

METHOD OF PREPARATION:

1. Put the flour, parmesan, oregano, basil and salt in a bowl. I mixed everything together and then added the cold, cubed butter.
2. Using my hands, I worked the butter into the flour until it resembled the texture of wet sand.
3. I gathered all the dough into a ball, flattened it, wrapped it in a bag (I ran out of cling film 😅) and put it in the freezer for 30 minutes. If you feel that the dough is too dry and does not come together, you can add 1-2 tablespoons of cold water.
4. I sliced the tomatoes into thicker pieces and arranged them on a plate lined with paper towels. I sprinkled salt on top of them.
5. I mixed the cream cheese with the shredded cheese with my hands.
6. I took the dough out of the fridge, put it between two baking sheets and stretched it until I got a thin sheet (not so thin as to be transparent though 😅). I tried to give it as round a shape as possible.
7. I placed the cream cheese in the center and gently stretched the dough so that I still had 2 cm of free edges all around.
8. I wiped the tomatoes with a kitchen napkin and put them on top of the cream cheese in a single layer.
9. I folded the edges and put the tart in the preheated oven at 180*C for 55 minutes.
10. Finally, I sprinkled fresh thyme on top.
