Salmon and broccoli tart

A healthy tart and definitely very DELICIOUS! You must try it!

BASE INGREDIENTS:

• 250g flour;
• 130g butter with 82% fat;
• 1 teaspoon of salt;
• 1 egg;
• 2-4 teaspoons of cold water, depending on the size of the egg.

METHOD OF PREPARATION BASE:

1. I sifted the flour on the worktop.
2. I sprinkled the salt over it, put the cold butter cut into cubes and incorporated it into the flour.
3. When I got a sandy consistency, I put the egg and started kneading. If the dough seems dry, add a little more cold water until you get a slightly pliable dough.
4. I wrapped the dough in cling film and put it in the fridge for an hour.
5. When the time was up, I put the dough between two baking sheets and rolled it out.
6. I placed the dough in the tart pan, pressed it well on the edges, removed the excess and pricked it with a fork a few times.
7. I put a crumpled baking sheet over the dough and on top of it I put ~200g of rice.
8. I put the pan in the oven preheated to 180*C for 15 minutes.
9. I took the pan out of the oven, removed the baking sheet and the rice. I put the pan in the oven for another 10 minutes.

FILLING INGREDIENTS:

• 4 eggs;
• 250g salmon without skin;
• 200g broccoli;
• 120g cheese;
• 200ml cooking cream;
• 1/2 teaspoon pepper;
• 1 teaspoon salt.

METHOD OF PREPARATION:

1. I beat the eggs thoroughly and added the spices on top.
2. I added the cooking cream, the grated cheese and mixed.
3. I placed the salmon on kitchen towels and patted it dry, then cut it into cubes.
4. I used frozen broccoli and left it in boiling water for 2-3 minutes to thaw. Afterward, I placed it on a plate to cool, drained it well, and then cut it into smaller florets.
5. After removing the pan with the base from the oven, I put the salmon pieces, the broccoli florets and the composition obtained in point 2.
6. I put the tray in the preheated oven at 180*C for 40 minutes.
7. I took it out of the oven, let it cool for about 15 minutes and then unmolded it. I put it on a wire rack and let it come to room temperature.
