I've never, never, never been a tiramisu fan! Yes.. on vacation I tried one that was SUPER good! So I tried to replicate it and it came out a perfect 10! 🤍

INGREDIENTS:

• 4 egg yolks;
• 120g sugar;
• 200ml heavy cream for whipping;
• 500g mascarpone;
• 350ml slightly stronger coffee;
• 1 shot of rum (I didn't have any rum and couldn't find a small bottle to buy);
• ~15g cocoa;
• biscuits.

METHOD OF PREPARATION:

1. In a bowl, mix the egg yolks and half the sugar until they tripled in volume and lightened in color.
2. Separately, in another bowl, beat the heavy cream and the rest of the sugar until the mixture began to stiffen (it shouldn't be very stiff), at which point I added the 500g of mascarpone. I mixed some more until I obtained a homogeneous mixture.
3. With a spatula, I incorporated the first mixture into the second. I obtained a fine cream.
4. I made 350ml of slightly stronger coffee. I mixed the coffee with the rum essence.
5. I soaked the biscuits in the coffee and placed them in a single layer in the tray. Over them I put half of the cream, sprinkled cocoa, put another row of biscuits, the rest of the cream and finally sprinkled cocoa.
6. We left the tray in the fridge for a few hours and then we enjoyed a deliciousness! 🤍
