Toast with sardines and pickled onions

INGREDIENTS:
• 2 traditional buns with potatoes;
• 50g cream cheese;
• green salad;
• a can of sardines;
• pickled onions;
• lemon juice;
• 10g of butter for frying the buns;
+ optional: pepper to sprinkle on top at the end.
METHOD OF PREPARATION:
1. I sliced the buns in half. I left a pan on medium heat, put the butter in and spread it all over the surface of the pan. I placed the buns in the pan and toasted them until they turned a golden brown.
2. I spread the buns with cream cheese and add a generous handful of salad. Then, I added the sardines, well-drained of oil (I pressed them between kitchen towels to remove any excess), pickled onions, a squeeze of lemon juice, and, if desired, a sprinkle of pepper.
How do you make pickled onions?
INGREDIENTS:
• 3 medium-sized red onions;
• 600ml water;
• 100ml vinegar;
• 2 tablespoons sugar;
• 1 teaspoon peppercorns.
METHOD OF PREPARATION:
1. In a pot, I combined water, vinegar, sugar, and peppercorns, mixed them well, and set the mixture over low heat. I waited for it to boil.
2. Meanwhile, I cleaned, washed and cut into thin strips the onions.
3. I put the onion strips (which I separated by hand) in the pot, mixed and left everything on low heat for 1 minute.
4. I turned off the heat, covered the pot with a lid, and let the mixture rest for 15 minutes.
5. I transferred it to a jar, and when it came to room temperature, I put the jar in the fridge.
