INGREDIENTS:

• 230g Oreo cookies;
• 30g butter (82% fat);
• 150g whipping cream;
• 200g white chocolate (26% cocoa);
• 5ml vanilla essence;
• 8g gelatin;
• 5 tablespoons milk;
• 500g mascarpone.

METHOD OF PREPARATION:

1. I weighed 155g of biscuits and separated them from the cream. Using a chopper, I finely chopped them and added 30g of melted butter. I mixed everything together and transferred the mixture into a 17cm round pan lined with baking paper. I pressed it down firmly and placed it in the refrigerator to set.
2. I whipped 150g of cream until it reached a firm consistency (it was no longer fluid). It took about 5-7 minutes.
3. I placed 200g of white chocolate and the cream from the biscuits I used for the base in a steam bath. It took about 4-5 minutes to melt.
4. I poured the resulting composition over the whipped cream, added the essence and the 500g of mascarpone and used the mixer to homogenize.
5. In a small bowl, I put the 5 tablespoons of milk and gelatin and put it in the microwave for 30 seconds, just enough to melt the gelatin. I added it to the initial composition and mixed well.
6. Finally, I broke the rest of the biscuits into smaller pieces (each biscuit into 4) and added them to the cream. I mixed and poured everything over the base.
7. I left it in the refrigerator overnight.

INGREDIENTS FOR THE GLAZE:

• 160g cream for whipping cream;
• 100g chocolate (minimum 50% cocoa).

METHOD OF PREPARATION:

1.I heated the cream for the whipped cream on the stove until it reached boiling point. Then, I turned off the heat and added the chopped chocolate. I let it sit for 5 minutes before mixing it well. I let it cool for two hours on the windowsill (you can also let it come to room temperature and then refrigerate it).
2. I placed the cake on a rack and covered it with the glaze. Make sure the cake is cold before applying the glaze.
